What do you do when you know that a year from now roughly, you’d quite like to open your own taproom, but then you walk past the perfect property when out for lunch and just know you need to go for it?

This was the question faced by Naomi and Dave when they walked past what they almost immediately knew was meant to be their Hoppy Place.

Fast forward a few weeks and – we have keys. So – far sooner than planned, it looks like we’re going to open a taproom.

The first problem with this, is we both work full time. As such – we’ve had to find a day 1 bar manager. Fortunately, beer runs deep in our family, so whilst Naomi will keep working her day job, and Dave will keep working his, we have Jason lined up to run the operation from Day 1 – we’ll introduce him further in due course.

So it was with that, that we started the processes of planning, of licensing, of integrating our EPOS, of the small manner of building an entire bar out of what was a bakery, and of trying to work out an opening day.
