In the first half of 2021 we did a contrast series of beers that were New England and West Coast versions of IPAs using the same hops. The goal was to highlight the difference in the expression of these hops when brewed in two differrent IPA styles with undergoing all of the processes that is unique to each style of IPA. And we are back again with a fresh pair of contrast IPAs with a hop combo that we feel is suited to both styles so well. Simcoe, Strata and Mosaic. Simcoe the mother of all things dank, pine and grapefruit but when expressed in hazy format gives off stronger peach notes. It’s daughter Mosaic needs no intro and has been a hop that has been instrumental in growing the hazy IPA style throwing off mango, blueberry and even some sweat. That brings us to Strata which we fell in love with since we first got our hands on it and is a good bridge between the other two with it’s ‘grapefruit and passion fruit in a field of marijuana’ vibe. This beauty of a hop combo has been layered on top of a super thick and lush creamy body with just a little bitterness to make this a proper NEIPA.
